From the estate’s oldest vineyards of all; a two hectare site home to a clonal version of the Prugonolo grape nicknamed ‘Salco’ (confusingly!), that produces great concentration when harvested at optimum ripeness. Matured in oak for 18 months, followed by three and a half years in bottle prior to release. This is a deep, rich wine that shows Vino Nobile at its very best - just starting to drink nicely now, with a complex finish that goes on and on. Add your finest steak and serve with this for a match made in heaven.

‘The 2006 Vino Nobile di Montepulciano Salco Evoluzione is a gorgeous, complete wine. Layers of dark cherries, tobacco, incense and new leather emerge from the glass, filling out the wine’s broad shouldered frame nicely. The tannins are firm, yet there is more than enough richness in the fruit to provide balance. This is a big Salco that will require a few years in bottle.
