The Chevalliers’ village level wine sees only stainless steel and the crisp, pure flavours and minerality come solely from the soil and Chardonnay grape – this is superb ‘basic’ Chablis. Excellent depth of apple and conference pear fruit, chalky minerality, and hints of honeysuckle. A fantastic seafood wine (fresh mussels are a current favourite), and works perfectly with grilled sole and new potatoes!

The nice thing about Domaine Chevallier is the ‘un-Chablisness’ of it all, really. This is proper, down-to-earth, small-scale winemaking on some steeper 11 hectares around the village of Montallery, which nestles in the Bois de Milly west of Chablis. All wines are domaine-bottled, with use of oak reserved for the Premier Cru wine, and Claude’s wines get regular mentions in the Guide Hachette thanks to his willingness to let the Chablis soil and the Chardonnay grape work their magic unhindered.
