Marco’s oil is produced almost exclusively from olives of the Coreggiolo variety, hand-picked in numerous sweeps of the olive groves in October before the olives are completely ripe. As a result, the yield is extremely low, the quality equally as high with an acidity of less than 0.2% and a substantially reduced number of peroxides. The olives are processed at low temperatures which encourages aroma and flavour. The oil has a beautiful green colour and intense nose – nuitty/artichoke, green apple – spice. This is a very classy Olive Oil – a little crusty bread and you have a delicious aperitif. Production is limited but we have managed to sneak some over with the wine.
