[2015 release - no vintage labelling allowed!] Grapes are hand-picked and manually sorted, then a very gentle seven hour press, to allow the juice to remain in contact with the skins to optimise flavor. Fermentation in a “large” oak barrel with natural yeasts which Arnaud firmly believes gives more rounded, complex and richer wines. Maturation on the fine lees for ten months. A delightful, complex glass of Chardonnay – the fruit is a touch more exotic than 'classic' Burgundy, but with a pure, dry, mineral spine which definitely says Alsace.
Just a hint of pear peel rises from the nose. The palate is rich with glowing pear fruit, even a little warm, but utterly precise. All this is met with a vein of lemon freshness that brightens all the apples and pears. There is concentration and juiciness, concentration and purity.
